One of my absolute favorite blogs, Cupcakes and Cashmere got it so right with this recipe for homemade sweet potato chips! They are so simple and so tasty. Use your favorite creamy dip for these. I like to make my own dip that's just plain greek yogurt with garlic salt mixed in. Have some of the spring Vidalia onions left from last week? Chop finely and mix right into your dip!

Strawberry-Grapefruit Smoothie
I know it feels like it's too cold to have smoothies, but they're still very good for you! It will make for an energizing breakfast and you will feel so refreshed after.

Grilled Cheese with Apples
I love using apples in sandwiches, especially granny smith apples! Their tartness gives great flavor to savory dishes. I put them in turkey sandwiches with smoked cheddar and I chop them up finely along with onions and mix into my tuna salad. How do you use apples on the savory side?

Grilled Eggplant Dip
Wellp, Miss Paula Dean has done it again. I think this dip would make a great lunch, appetizer or snack. I know it's too col to be out there grilling, but I know that doesn't slow many of you down. For those of you who don't grill in this weather, you should own a grill pan anyway or a panini press will do the trick!
Ingredients:
1 tsp of your favorite all-purpose seasoning
1/2 teaspoon coarse salt
3 tablespoon lemon juice, plus lemon wedges for serving
3 tablespoon extra-virgin olive oil, divided
4 tablespoon tahini
6 garlic cloves, each cut into 3 to 4 lengthwise wedges
2 eggplants
3 tablespoon minced fresh flat-leaf parsley
Boston Lettuce leaves
Paprika
Grilled pita bread, for serving

1/2 teaspoon coarse salt

Skinny Mushroom Risotto
I have been loving Skinny Taste recipes lately! It's a great place to find lighter versions of your favorite comfort foods. This is the perfect side dish for grilled chicken or your favorite fish.
Ingredients:
2 cups mushrooms, sliced
2 cups arborio rice
1 tsp olive oil
3 tsp butter
2 shallots, minced
1 cup white wine
8 cups fat free chicken stock (or vegetable stock)
salt and pepper
1/2 cup grated parmesan cheese
4 tbsp chopped parsley
