Green Refresh Smoothie

Anyone else feel like the spinach this week just won't quit?  I used about 3 cups in the Go Green Smoothie, then I tossed 2 handfuls into some Homemade Take-Away Beef With Broccoli, and some how I still had a good 3 cups left this morning for yet another smoothie.  Pretty sure my spinach keeps regenerating.

So this morning I wanted another green smoothie, yet something more refreshing than sweet.  So I grabbed the one pear and the one lemon I had left and thus, the Green Refresh Smoothie was born.  This is the perfect morning wake up, and it would be especially great after a morning workout to get you recharged and give you a nutrient boost.  Other than 1 cup of almond milk and 12 ice cubes, this smoothie is all produce.  And  if you like lemonade, then this one is sure to please!


Green Refresh Smoothie





















Ingredients:

12 ice cubes, divided
1 banana, peeled
1 Bartlett pear, cored and cubed
1 cup unsweetened vanilla almond milk (I used Almond Breeze)
3 cups spinach, washed and stems trimmed
Juice of 1 lemon

In  your blender, add 6 ice cubes, the banana, pear and almond milk.  Blend until ice is fully crushed.  Then add your spinach, and you may need to add it in batches so you're not cramming the blender.  Once the spinach is fully blended, add in your lemon juice and final 6 ice cubes, and blend until the ice is completely crushed.

Serve immediately.  Makes about 2 mason jars (pint sized) full.

Go Green Smoothie

If it's green and in liquid form, I want to drink it.  Go figure.  Doesn't matter that it looks like gnarly baby food, I want to consume it all.  One big problem with most commercially available smoothies though...they put wheat grass in them.  And for me and my gluten-hating system, that's a big no-no.  So if I want a green smoothie, I've got to make it myself.  Who wants grass in their smoothie anyway?!  Leave that for the cows!  So when I saw the massive bundles of spinach this week, I knew exactly what needed to happen first thing Saturday morning.  GREEN SMOOTHIE TIME!  Woot!  Trust me, even with 2-3 cups of spinach you cannot detect the spinach flavor.  I even forced a mason jar full of green goodness on the Mister.  He looked at me suspiciously, gave it a swig and declared it was delicious.  He then proceeded to drink two mason jars full and asked if there was more.  So if you're on a post-holiday smoothie kick, this is the perfect drink to give your body a jolt of wonderfulness and get fueled up for the day ahead.  I still have more spinach left even after this recipe and throwing two handfuls into some Homemade Take-Away Beef with Broccoli, so look for yet another green smoothie recipe to follow in the days to come.

Go Green Smoothie




















Ingredients:
16 ice cubes, divided
1 pint strawberries, tops trimmed and quartered
1 1/2 cups unsweetened vanilla almond milk (I use Almond Breeze, you can use any milk of your choice, but the almond milk gives you a nice added protein boost)
2 Bartlett pears, cored and cubed
Juice of 1 navel orange
1 tsp local honey (you can also use agave or maple syrup)
2-3 cups spinach, well rinsed and stems trimmed

Into your blender, add 8 of the ice cubes, the strawberries and almond milk.  Blend on high until ice is fully crushed and strawberries are blended.  Add in pears, navel orange juice and honey, and blend those down as well.  Next add your spinach, and you'll likely have to blend these down in batches to make sure you have enough room in the blender.  Blend until completely smooth.  You'll likely have some noticeable green bits no matter how long you try to blend it, and that's okay, you won't be able to taste them.  Then add in your remaining 8 ice cubes and blend until ice is fully crushed.

Serve immediately.  Made 4 mason jars full.

Cilantro or Cilant-NO?

Cilantro and I are tight.  I love that fragrant herb and it loves me back.  But I recognize that for some of you, you might hear that we're getting cilantro this week and your first thought is, "Cilant-NO! That stuff tastes like soap!"  A few years ago, I learned that for some folks, cilantro only reads like soap or cleaning products on their taste buds.  This is not a case of having an unrefined palate (Julia Child herself despised cilantro), it's simply our taste buds being our personal food safety testers to keep us from harm.  Since cilantro contains the same or similar type of aldehydes found in soaps, certain chemicals and even in bugs, some people's taste buds pick up on the flavor and alert, "DANGER!  DANGER!  DO NOT EAT!"  Hence, why it reads like soap or cleaning products to many folks, it's their taste bud's way of stopping them from eating the perceived hazard.

So can those of us who love cilantro boast about having more evolved and intelligent palates?  Probably not, as I can shamefully admit to once eating an entire slice of moldy pizza and then reached for another before I bothered to flip on the light and see that my pizza was growing a sweater.  Like I said, shameful.  But the good news for cilantro-phobes is that some people have found if the herb is crushed or really finely chopped, that by breaking it down, it decreases the soapy flavor and only imparts that wonderfully fragrant note that those of us who love cilantro rave about.

Whether you love it or have always reviled it, we've got two great cilantro containing recipes.  For those of you doubters, in both of these you can just mince the heck out of the cilantro, let it rest for a few minutes and then toss it in.  Think almost a pesto consistency in how finely you mince it.  Click the link to view the first recipe, but the second is provided in this post...

Thai Chicken Quinoa Bowls
























If you have an aversion to quinoa, you can easily toss this with white or brown rice, and since it has a Thai flavor profile, you might even try tossing it with rice noodles for a bit of a riff on Pad Thai.  Pass the Sriracha!




Healthier Three Layer Taco Dip
























Layer 1:
8 oz Neufchatel 1/3 less fat cream cheese (I use Tofutti Better Than Cream Cheese for dairy-free)*
8 oz reduced fat sour cream (I use Tofutti Sour Supreme for dairy-free)*
1 package low-sodium taco seasoning**
1 tsp chipotle pepper (or less to control the heat)**

Beat all ingredients together until well-blended and creamy.  Spread in the bottom or a deep dish or pie plate.  Refrigerate for at least one hour to allow this layer to set up and firm up.

*When using the reduced fat cream cheese and sour cream, beware of the increased water content.  So drain any excess liquid off of the sour cream before using, and then make sure your subsequent layers are well-drained before adding them.

**Since determining the gluten-safe properties of most taco seasonings, I just created my own.  This is a great way to save on sodium, because even the low-sodium seasonings are still too high for my taste.  Alas, I made mine recently at about 2 am and thus didn't measure, but I did a blend of garlic powder, paprika, ground black pepper, chipotle pepper, and a dash of salt.  So add a few dashes and season till you get the taste you want.  You definitely want the smoky heat of the chipotle in this layer, so to keep from going overboard on the heat you can up the smoke factor with more paprika.


Layer 2:
1 head of romaine lettuce, chopped fine and patted dry with a paper towel

Evenly spread over cream cheese mixture.


Layer 3:
4 tomatoes, seeded and diced
1/2 chopped sweet onion
1 chopped and seeded jalapeno pepper
3 Tbsp minced, fresh cilantro
Juice of 1 lime or lemon

Mix all ingredients together in a separate bowl and then, using a slotted spoon to allow for drainage of excess liquid, evenly spread over top of romaine.  You'll likely have left over pico de gallo, so save to use as a plain salsa or for topping homemade tacos, grilled fish or chicken.




Shredded Kale & Brussels Sprouts Salad with Lemon Dressing via Just A Taste

Happy New Year everyone!!!  Here's to hoping we all have a bountiful and beautiful 2014!  Speaking of bountiful, we finalized the Crop Share list for the first week of the Deep Winter round, and we're pretty darn excited.  Because we source domestically for this round, we are able to get so much more variety, which means we can have a lot of fun with the boxes each week.  We know for sure we'll be doing a Super Bowl themed box again this year, and since Valentine's Day is on a Friday, there will definitely be a box o' romance in the works!

But for this week, two of the items we've got, Brussels sprouts and lemons, are two of the ingredients needed for this DELICIOUS looking Shredded Kale & Brussels Sprouts Salad from Just A Taste.  And we'll be getting in fresh kale for the store, so we'll have nearly all the base ingredients on hand for you to make this salad.  I know I'm going to be giving it a try!  Just remember, when using raw kale for a salad, you want to massage that kale first.  You know you feel happy after a massage, and so does kale, as massaging it takes the bitterness away.  Ooo la la!
