Sweet Potato Fries With Lime Dipping Sauce

Sweet potato fries are a great snack on their own. They make a great side for turkey burgers or just about any sandwich. There is no greater feeling then pulling these out of the oven perfectly crisp!

Ingredients:
1 lb. unpeeled sweet potatoes (about 2 small)
1/4 cup extra virgin olive oil
1 tsp kosher salt, plus more for seasoning

Lime Dipping Sauce
1/3 cup mayonaise
1/2 tsp finely grated lime zest
1 tbsp fresh lime juice
1/2 tsp minced garlic
pinch of kosher salt

Spiced Salt (optional)
1 tsp kosher salt
1/2 tsp sugar
1/4 tsp ground cinnamon
1/4 tsp ground cumin
1/4 tsp ground coriander 
1/4 tsp paprika

Raw Radish and Cucumber Salad

How beautiful is this salad? It's a great way to incorporate all the great spring vegetables available. You can add fresh corn to it or tomatoes to give it even more color and nutrition.

Yield: 2

Ingredients:

1 cucumber, seeded and sliced into matchsticks

1 medium carrots, shredded

6 medium radishes, shredded

1 teaspoon extra virgin olive oil

1 teaspoon apple cider vinegar
1 teaspoon agave (or honey)
3 Tablespoons cilantro, chopped
salt and pepper to taste

Crustless Spinach, Onion and Feta Quiche

Try substituting spinach for swiss chard. It's amazing!  Not a fan of feta? Try it with goat cheese! You can also make it into mini quiches and bake in a muffin pan.

Yield: 6 Servings

Ingredients:



1 medium onion, diced
6-oz fresh baby spinach
2 large eggs
1/2 cup egg beaters (liquid substitute)
1/2 cup all purpose flour
1/2 tsp baking powder
1/4 tsp salt
pinch cayenne pepper
1 1/3 cups non fat milk
1/2 cup feta cheese

Mac N' Cheese With Braised Leeks

Mac and Cheese with braised leeks and asiagoWe've got a rainy weekend ahead of us and this would make the perfect comfort food! For those of you who are trying to introduce new vegetables to your kids, this would be a great opportunity! They won't ask about the green stuff in there, they'll be too busy wolfing it down!

Serves: 8

Ingredients:
For the leeks
3 tablespoons olive oil
4 leeks – 4” of tops and roots trimmed (1 1/2 lbs), cut in half lengthwise, thoroughly washed and cut in 1/4” slices
4 large garlic cloves – skinned and finely chopped
1/4 teaspoon dried red pepper flakes
1/2 teaspoon sea salt
freshly ground black pepper to taste
3/4 cup white wine




For the béchamel
6 tablespoons unsalted butter
6 tablespoons unbleached white flour
6 cups milk – warmed
1 cup heavy cream
freshly ground nutmeg to taste
1/2 teaspoon sea salt
freshly ground black pepper to taste
8 oz (225g) Wisconsin Asiago – coarsely grated (2 cups)

For the bread crumbs
1/3 cup bread crumbs
1/2 cup finely grated Wisconsin Parmesan
1 tablespoon olive oil
For the pasta
1 lb pennette lisce or macaroni
1 tablespoon sea salt (for the pasta water)
1 medium (15″ x 10″) ceramic or glass baking dish – buttered

Oven-Baked Zucchini Fries

We are big fans of finding delicious alternatives to our guilty pleasures. This one from Fun & Food Cafe hits the nail on the head! It doesn't taste like it's a healthy alternative to french fries, but it is and as a bonus, they're easy to make!

Grilled Red Potatoes With Chive Sauce

For those of you who are just aching to break that grill out and have some folks over, this will be a great side dish for those steaks, burgers or hot dogs! This would even make a great appetizer.

Ingredients:

  • 5 medium red potatoes, sliced into 1/4 inch slices
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 2 tablespoons minced chives (or scallions) plus more for garnish
  • 1/4 teaspoon kosher salt, plus a pinch more
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic powder


Cantaloupe Meringue Pie

It is a real treat for us to have cantaloupes this early in the season! We figured we have to make the best of it by making this unique and great-looking pie!

Ingredients:

Crust:
1 1/2 cups finely ground shortbread cookies (like Keebler Sandies)
3 tbsp. unsalted butter, melted

Filling:
1 large very ripe cantaloupe
1/2 cup flour
1/4 cup sugar (increase up to 1/2 cup if your cantaloupe isn’t very sweet)
1/4 tsp. salt
1 tsp. cornstarch
1/2 tsp. water
3 egg yolks
2 tbsp. water
1 tbsp. butter
1/4 tsp. vanilla

Topping:
3 egg whites
1/4 tsp. cream of tartar
6 tbsp. sugar

Strawberry Cheesecake Trifle

This great-looking dessert requires no baking at all. You can also divide it up and serve it in individual glasses or mason jars!

  • 2 pints fresh strawberries, sliced
  • 1 cup sugar (divided)
  • 2 packages cream cheese, softened (8 ounces each)
  • 3 tablespoons orange juice
  • 3 cups whipping cream, whipped
  • 1 loaf (10-3/4 ounces) pound cake, cut into 1/2 inch cubes
  • 3 squares (1 ounce each) semisweet chocolate, grated
  • Chocolate curls and additional strawberries (optional)
