Winter Jewels

Photo via Perpetual Feast
This week's box is a classic mixture of winter root vegetables.  I'd love to give you some elegant suggestions you can use to show off your cooking techniques, but unfortunately this week doesn't lend itself to fancy-fancy.  This week is about home and hearth, comfort food.  From a cooking perspective, I think of a plate of root vegetables like this not as a dish to make better, but to avoid messing up.   The ingredients are going to work so well together, Mother Nature was our chef this week.

How does one "avoid messing up?"  Simple.  Peel it, cut into bite sized pieces, and toss with olive oil.  Generous salt and pepper and in the oven.  Around 350˚ for half an hour or so, put it on a plate.  Ta-da.  The "big secret" is to chop up all of the vegetables into equal size pieces as best you can.  They all have that hard texture, and they're all going to cook at pretty much the same rate.  By using equal pieces, they all cook in the same amount of time.

Yes, there are some avenues for creativity.

  • After you roast them, toss with some finely chopped herbs, like parsley.  A little thyme can work too.  Keep it simple.
  • Glaze sparingly with something sweet, like honey or maple syrup.  Prepared this way, my 5-year-old thinks they're dessert.
  • Toss with a little vinaigrette.  Again, use sparingly.  While that link only uses parsnips, any of these vegetables can substitute for each other.
  • Roast them with an apple or some other winter fruit (cranberries, for example).
I guess the arrival of winter isn't all bad!

Acorn & Butternut Squash Soup by Crop Share Member Brandi Collins

Several weeks ago, Crop Share member Brandi Collins posted on our Facebook page about this Acorn & Butternut Squash soup she had made.  I knew right away, we had to have that recipe and I had to share it with you all.  So here it is, from Brandi's kitchen to yours, a Fall squashtacular soup that is just what the Daylight Savings Time sleepies need.  Plus, if you've been perplexed by the Buttercup squash from this past week, you can easily substitute that in for either the acorn or butternut in this recipe, and use up some of your Amish candy onions in place of a regular sweet onion!

Acorn & Butternut Squash Soup

INGREDIENTS:
1 butternut squash, halved and seeded
1 acorn squash, halved and seeded
3 tablespoons butter
1/2 chopped sweet onion
1 quart chicken broth
1 tablespoon minced garlic
1 (8 ounce) package cream cheese, softened
1/2 teaspoon ground black pepper
Salt to taste
fresh parsley, for garnish

DIRECTIONS:

1.
Preheat oven to 350 degrees F (175 degrees C). Place the squash halves cut side down in a baking dish. Bake 45 minutes, or until tender. Remove from heat, and cool slightly. Scoop the pulp from the skins. Discard skins.
2.
Melt the butter in a skillet over medium heat, and saute the onion and garlic until tender.
3.
In a blender or food processor, blend the squash pulp, onion, broth, cream cheese, pepper, and salt until smooth. This may be done in several batches.  This may also be done in the pan with an immersion blender.
4.
Transfer the soup to a pot over medium heat, and cook, stirring occasionally, until heated through. Garnish with parsley, and serve warm.

Savory Buttercup Squash Soup

Roasted Buttercup Squash SoupAt this point, you all should be pros at cutting up hard squashes and throwing them in the oven. I know it takes a lot of trial and error and sharpening lots of knives, but the rewards are oh so sweet. Buttercup squash is the sweetest of the winter squashes. It can even replace sweet potatoes in most recipes. The sweet and creamy flesh of this squash makes the perfect soup.

Ingredients:
1 small buttercup squash, about 2 pounds
1 large sweet onion, coarsely chopped
1 scant teaspoon salt
dash black pepper
2 tablespoons olive oil
1 tablespoon butter
1 tablespoon olive oil
2 ribs celery, chopped
2 tablespoons chopped fresh sage
4 cups chicken broth
salt and pepper, to taste
shredded Parmesan cheese, for garnish
